Jimmy Dean® Loaded Breakfast Flatbread

Ingredients
- ½ lb. Jimmy Dean® Regular Premium Pork Sausage
- 3 tbsp butter, split 2 for gravy and 1 for flatbread build
- 2 tbsp flour
- 1 ½ cups milk
- 2 flatbreads
- 1 cup cheddar cheese, shredded
- 4 slices prosciutto
- 1 cup cherry tomatoes
- 2-4 eggs
- 1 tbsp oil
- Chili crisp
- 2 tbsp mayo
- 1 tbsp sriracha
- 1 tsp honey
- 1 tsp lemon juice
- Salt and pepper, to taste
Directions
- Cook the Sausage
- Preheat your griddle to medium heat.
- Add a small drizzle of oil to the griddle surface.
- Cook the sausage until browned and cooked through, breaking it apart as it cooks.
- Remove from the griddle, reserving a small handful for the flatbread’s final garnish.
- Transfer the remaining sausage to a saucepan to make the gravy.
- Make the Sausage Gravy
- Add 2 tbsp of butter to the saucepan with the cooked sausage.
- Once melted, sprinkle in flour and stir to coat the sausage, cooking for about 1 minute to form a roux.
- Slowly pour in the milk while whisking until the mixture thickens into a rich gravy texture.
- Season with salt and pepper to taste.
- Blister the Tomatoes
- On the griddle, add a drizzle of olive oil and toss in the cherry tomatoes.
- Cook until the skins blister and start to char slightly.
- Season with salt and pepper while they are still hot.
- Remove and set aside.
- Toast the Flatbread
- Add the remaining butter or a drizzle of olive oil to the griddle and toast the flatbread on both sides until golden and crisp.
- Toasting helps add great texture and ensures the flatbread will hold up well with toppings.
- Cook the Eggs
- Crack eggs directly on the griddle and cook sunny-side-up.
- Lightly season with salt and pepper.
- Leave slightly undercooked, as they will finish cooking in the final step.
- Make the Sauce and Assemble
- In a small bowl, combine mayo, sriracha, honey and lemon juice.
- Whisk until smooth and creamy. Optional: transfer the sauce into a squirt bottle for easy drizzling.
- Place the toasted flatbread on the griddle.
- Spoon sausage gravy evenly over the surface of each flatbread.
- Sprinkle shredded cheddar cheese over the top.
- Top with blistered cherry tomatoes.
- Gently place the sunny-side eggs on top.
- Cover with a basting dome to melt the cheese, finish cooking the eggs and toast the bottom of the flatbread for a perfect crunch.
- Garnish with prosciutto pieces, extra sausage crumbles, small dollops of chili crisp and squirts of special sauce.
